Brewing Kombucha Tea
I am writing to share a simple, effective and fun way of promoting overall health - it is brewing and drinking Kombucha tea. In TCM, Kombucha is considered a digestive (Spleen and Stomach) tonic which reduces damp and phlegm and also has beneficial effects on the Liver. Many people consider Kombucha to be a mushroom, but technically it is not - it is a Symbiotic Culture of Bacteria and Yeast (or SCOBY). If you walk into a Whole Foods market or other health food store, you can now find Kombucha drinks selling at very high prices - well, you can make your own for pennies a serving.
I have been brewing Kombucha for over a year and I feel it has generally improved my digestive health and boosted my immunity as well. I also enjoy the actual brewing process - it speaks to the "mad scientist" in me! I experiment with adding different Chinese herbs and spices (Astragalus, Licorice, Cloves, Ginger, Chinese dates, etc).
